Pumpkin Pie in Two Great Ways October 7, 2013

Today was great. I made pumpkin pie and pumpkin pie pops for dessert. They taste awesome.  ^_^

For the pumpkin pie I used canned pumpkin and a homemade pie crust. The reason I am excited is because I made the crust from scratch and it is awesome. I usually buy the crust because pumpkin pie is the only pie I bake but today has changed that.

I got the pie crust recipe from  http://www.chow.com/recipes/10746-basic-pie-dough.

Here’s the recipe for homemade pie crust:

WHAT YOU WILL NEED:
1 1/2 Cups of all purpose flour
1 Teaspoon of sugar
1/4 Teaspoon of salt(fine not sea salt)
1 Stick of butter
4-5 Tablespoons of water

WHAT TO DO:
1. Mix the dry ingredients.
2. Cut the butter into small pieces and add to flour. Cut the butter into the flour mix until it is yellowish and pea sized.
3. Add 4 tablespoons of water.* Combine to form a dough ball. Note: * If it is too dry to hold it’s shape add last tablespoon of water.
4. Flatten ball of dough into a disk. Wrap in seran wrap and refrigerate for 30 mins or more.
5. Roll out dough and place in pie pan. Then fill with whatever filling you prefer and bake as directed.

For the pumpkin, I followed the recipe on the can.

Using the same recipe, some cookie cutters, and lollipop sticks you can make pumpkin pie pops.

For pie pops:
1. Preheat oven to 375 deggrees. Roll out the dough.
2. Cut your mini pie rounds with cookie cutters.
3. Lay out the single pieces leaving room on the cookie sheet for the sticks.
4. Lay lollipop sick on dough and press down lightly. Add a dollop of pie filling.
5. Top with another piece of pie dough and use a lollipop stick to crimp shut. Top with egg wash and pop into oven.
6. Bake until edges are golden brown, about 12 to 15 mins.

It was fun, easy, and delicious. Best part is that anyone can do it. It is kid friendly fun. ^_^ And did I mention it is fun to eat.

 

D’s 3rd Birthday October 2, 2013

Hello.
Just realized that I totally forgot to post about my son’s 3rd birthday. I spaced and I apologize. Lol.

D’s 3rd birthday was a bbq. We had been bbq all summer and it seemed like the best way to go. We were totally right, btw.  Anyway, our theme was loosely Curious George, which was fun. A bright yellow and red party with extras.

My son and I getting ready to take a bunch ofb photos. As you can see we have some rainbow lunchbags as party favors, red and yellow star balloons, and candy jars.

We had candy jars with Curious George gummies, m n m’s, animal crackers and mixed chocolates like Hershey bars and twix. We also had silly string for the kids to play with.

We had pin the tail on the donkey and pin the butterfly on the log (Curious George version of pin the tail on the donkey). We also had bubbles for the kids.

In each favor bag there was an activity book, washable crayons, a glow stick, candy, a bouncy ball, a notepad, and a slinky. The kids had fun and the grown ups did too.

The adults enjoyed music and cocktails as we bbq. It was lots of fun.

Summer is Over… September 18, 2013

It has been a great Summer, filled with wonderful memories. Now, it’s over. That means outdoor parties (other than tailgating) are over. 😦

But I have a solution for passing time inbetween fall holidays: a tea party.

They are simple, fun, and delicious. I hosted a tea party for five recently and we had a great time. We had some tea and a chance to chit chat and catch up. We also played a quick mystery game. It was great seeing friends and enjoying mini sandwhiches.

We had cucumber sandwiches, mini blt’s, pumpkin spice cookies, tea cookies, pear jam, thin mints, lemonade cookies, and dark chocolate ganache to spread on the tea cookies. It was yummy and easy.

A’s Baby Shower May 1, 2013

Hello all,

After a lot of preparation and hard work, A’s baby shower was said and done. We (my mother and I) set it up about three and half hours earlier just so we would have enough time to cook and get the little things like ice. So first the photos. P.S. Don’t mind the dates. My camera reset and the dates ended up wrong. The day of was actually April 27th 2013.

The Main Table:

The Main Table in detail: On this table I set up the homemade desserts and general party stuff. The first thing you see is that the table is symmetrical. This was done on purpose to draw the eye to the center then slowly out. The cake is Lemon Butter Cream with White Cake and Lemon Curd filling. Then beside it (on each side) is a Chocolate Cake Pop Bouquet. In front of the Cake pop bouquets there are mini Oreo Truffle and Cake Pop bouquets. The Stars are Oreo truffles. In front of the cake (between the bouquets) there are Chocolate spoons. At the end of table there are Pink Lemonade Cupcakes with Lemon Butter Cream. The top tier has Candy Covered Oreos in pink and yellow. It is a little hard to see but in the back there are Yellow Star shaped Oreo truffles with a vanilla candy coating (instead of the usual chocolate). The Homemade Meringues in the back ended up on the Candy Buffet Table. More on that later.

The Food:

For the party we decided to have a late lunch. We ate Arroz con Gandules (Rice and Pigeon Peas), Baked Chicken and Asian Salad. We set it up buffet style. It was definitely easier than sitting down to a formal lunch. I also liked it better because no one was shy about getting second and even third helpings. That was one of the best parts because everyone thoroughly enjoyed the food and the company as we all sat in the living room eating and exchanging baby stories.

The Party:

The party was very laid back and we took our time going from eating to games to opening presents and eating cake. By the end of it, the Mom to be (A) was sitting back listening to baby stories and enjoying a shoulder rub. ^_^

The Candy Buffet:

We used Lemonheads, Jujubees, Marshmallows, Sixlets, Gumballs, Homemade Meringue Cookies, Twizzlers, Pixie Stix and Crayon shaped Gum. All of the jars were homemade or bought at the dollar store and dressed up. The 3 large goldfish bowl like jars were bought at yard sales and thrift stores. All in all the containers for the Candy Buffet cost about $25. The candy was a variety of color, except for the gumballs and sixlets, which were pink, yellow and purple. The diaper cakes were also on this table along with a bedtime rhymes book. And just for fun we spread a bunch of crayon shaped pieces of gum all over the table. We added serving utensils and some baggies for everyone to take some home.

The Favors:

The favors were a combination of things. First the figurines, then the candy buffet and some mini bottles of sixlets as an added bonus.

On a side note, the wish cards and advice cards were a hit. Everyone filled one out for mom and baby. When they were done, I placed them in the baby’s room with a few framed printouts or bunnies and sheep as an additional surprise.

All in all, I think it went really well. The mom to be had great time and her guests enjoyed their visit with her. Some came as far as Maryland to come to the party so I am glad we went the direction that we did. I am also glad that people felt happy and welcome. For me, having that familiar feeling of family and long time friends, even among people who had just met was wonderful. The party was great and I am glad I was able to do it. It really was something special for a close friend, who is like a sister to me.

Lastly, I want to thank my mom for her support and assistance. Without her, it would have been really crazy. I also want to thank my husband and my son for their patience. I was busy most of the week and it was hard on them but they supported me anyway. Thanks. I love you all.

Baby Shower Stuff Thus Far April 24, 2013

Hello Hello!

As of Saturday, I have purchased everything I need for the party except the fresh food for the buffet style meal. I have put together the favors and the DIY Candy Buffet Jars. I have made Wish cards and a cute container for the Advice Cards.

Now, I am getting started on the desserts. I was going to do a candy buffet and call it a day but a Candy Buffet and Dessert Table combo is more my style. ^_^ So far, I have made Chocolate Spoons, Pink and Yellow Meringue Cookies (Lemon Flavored), Star shaped Oreo Truffles with Candy coating instead of chocolate and Oreo Truffle Star pops.

Today will be all about the cake. I am baking the cake I need to make the cake pops as well the actual Baby Shower cake. I am not frosting the cake today, just baking it. After the party I will post pics of everything and catch up on my blogging. I will also add DIY instructions, tips and tricks to putting together a Baby Shower or any kind  of party.

Cupcake Jars! December 16, 2012

‘Tis the season to be jolly  and enjoy the yummy goodness that a cupcake can bring. So here’s to the holidays and festive but always yummy treats.

These are the some of the colorful cupcakes I made today. They are a little messy and covered in chocolate butter cream, which is my way of saying they are delicious. ^_^

Besides these cuties. I also made some like this.

Very festive, right. Now, that you’ve seen them I’m sure you want to know how I threw them together. Well, here’s a quick how to.  ^_^

What You Will Need

  • 1 Box of White Cake Mix (Made from scratch is fine too)
  • Food Coloring (Liquid or Gel is fine)
  • Chocolate Butter Cream (any flavor you like would work)
  • Jam or Jelly Jars

What To Do

  1. Mix the White Cake Mix as directed or put together your favorite white cake recipe. I used a box mix because it was faster and I really wanted some cupcakes. ^_^ Either one is yummy.
  2. Then the divide the batter into several bowls. I divided mine into five bowls but you are welcome to do more or less. Just try to divide it evenly between however many bowls.
  3.  Add the food coloring gel and make the colors you want.  I made blue, red, green, yellow and orange.  (Most food coloring packages have basic color guidelines if you need to mix more complex color combos like Teal, which I didn’t make today but I still love.)
  4. Preheat your oven as instructed by your recipe.
  5. Line cupcake pans without mixing the colors. If you mix them, you can make marble effects and that type of thing but this works best in solid colors.
  6. Bake!
  7. Let cook on wire rack.
  8. Remove wrappers from five cupcakes, one of each color. Cut into two rounds.
  9. Drop the bottom of one color into the jar. Top with butter cream. Add another piece in a different color. Top with more butter cream. Then place the top of a cupcake on top and add a nice swirl of butter cream. Mix and match however you like.
  10. Once you run out of pieces you can cut more cupcakes and put them in the jars or just top the whole cupcakes. I did both. Some were for now and the rest for later.
  11. Eat!!

Enjoy now or put a lid on them and refrigerate for later. Either way is yummy. They can be stored in the fridge for up to three days with a lid.
