Today marks the last month countdown. I am excited and have no idea if I will laugh, cry, or do both on his birthday. What I can say, is that I will be very happy. Either way, I find myself planning and planning like a mad woman. To what end? Well, here’s what I’ve got so far:

First Birthday Party Plan

THEME: Sesame Street

SET UP:  Laid back, relaxed, cute, and fun. Large table set to the back with lots of the treats set out.

MENU AND RECIPES:

  • Birthday Cake- Sesame Street with yellow, red, and blue decorations.
  • Candy- All sorts of chocolate and fruit candy. Possibly set them up in jars.
  • Ice Cream Cake Pops- Recipe Below.
  • Oreo Truffles- Recipe Below.
  • Cake Pops- Same as “Ice Cream Cake Pops” recipe.
  • Drinks: Soda, water, and juice boxes for everyone.
  • Adult Drinks: Wine and beer.

Aside from this list of mine, I came up with several recipes that would be good. I was going to try them today but I made a turkey instead. ^_^

Here are my recipes:

 

Ice Cream Cake Pops

What You Need:

1-2 pkg. Sweet Ice Cream Cones

1-2 pkg. Wafer Ice Cream Cones

1 pkg. Cake Mix (Chocolate)

1 pkg. Frosting (Basic white or vanilla)

1 pkg. Candy Melts

Toppings- Whatever you would like to cover them in- like sprinkles

1 pkg. Plastic Lollipop Sticks

Make It:

BAKE the Cake and allow to cool. Cut the cake into four pieces. Then crumble the cake into a bowl by rubbing two of the pieces together.

MIX frosting into the cake crumbs.

SHAPE into medium sized balls (about the size of the opening of an ice cream cone) and place on parchment covered cookie sheet. Refrigerate until ready to dip.

MELT candy melts in microwave as directed. Make a base for the cones to rest on by making small cone shaped holes in a Styrofoam base.

PLACE  lollipop sticks in the balls to dip. Remove the sticks and slide onto cones. Lightly cover in sprinkles.

Note: For Cake Pops leave in the lollipop stick and place on a Styrofoam base to dry.


Oreo Truffle Recipe (found online)

What You Need:

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

1 pkg.  (16.6 oz.) OREO Cookies, finely crushed (about 4-1/4 cups), divided

2 pkg. (8 squares each) BAKER’S Semi-Sweet Chocolate, melted

Make It:

MIX cream cheese and 3 cups cookie crumbs until well blended.

SHAPE into 48 (1-inch) balls. Dip in melted chocolate; place on waxed paper-covered baking sheet. Sprinkle with remaining cookie crumbs.

REFRIGERATE 1 hour or until firm. Store in tightly covered container in refrigerator.

How to Melt Chocolate

Place unwrapped chocolate squares in microwaveable bowl. Microwave on HIGH 2-1/2 min. or until chocolate is completely melted, stirring every 30 sec.

How to Easily Dip Truffles

To easily coat truffles with the melted chocolate, add truffles, in batches, to bowl of melted chocolate. Use 2 forks to roll truffles in chocolate until evenly coated. Remove truffles with forks, letting excess chocolate drip back into bowl. Place truffles on prepared baking sheet; let stand until firm.

How to Store

Store in tightly covered container in refrigerator.

I am going to be making Cake Pops tomorrow. Wish me luck. I will hopefully have time and a camera handy, so I can share my results.
